Chase Away the Winter Blues Raw Soup

Hi Folks!

How about a clean start, raw soup for the dreary winter blues? I know it sounds a little crazy to eat a cold(more like room temp) soup smack in the middle of winter..BUT, I am telling you, it will really put a nice spring in your step. Packed full of nutrition and love..it is truly a powerhouse in a bowl. I’m going to venture and say it might even be tastier than you imagine:-)

Chase Away the Winter Blues Raw Soup Recipe

handful of spinach
2 whole leaves bok choy
handful broccoli
1/2 avocado
1/4 cucumber with skin
thumb size piece of ginger
2 scallion stalks(roots removed)
12 tamari almonds(recipe to follow)
dash of tamari
handful leek sprouts
3 tbsp umeboshi plum vinegar toasted sunflower and pumpkin seeds(recipe to follow)

{Makes 3-4 servings}

throw all except sprouts and seeds into food processor(or blender) and blend until small chop consistency then add water  while processing until silky/smooth consistency….approximately 1 to 1  1/2 cups

Add salt, pepper and juice of 1/2 lemon to taste.

Serve in bowls with umeboshi plum toasted sunflower and pumpkin seeds and whatever sprouts you like…we used leek sprouts.

Umeboshi plum vinegar toasted sunflower and pumpkin seeds

1 cup sunflower seeds
1 cup pumpkin seeds
couple dashes umeboshi plum vinegar

Toast seeds in pan on medium heat for 3-5 mins then add a couple of dashes of umeboshi plum vinegar(careful not to use too much, it can be salty!)  Move around in pan until seeds are dry and you see a white coating from the vinegar…let cool and then store(we like glass jars) to use in soups, salads, on eggs, etc. You can use any nuts seeds you like..sometimes I add pine nuts, sesame seeds..etc.  A nice sour/salty addition to many things!

Tamari Almonds

3 cups raw almonds
3 tablespoons tamari
1/2 tsp sea salt
1 tbsp olive oil

Mix almonds, tamari, olive oil and salt then spread out on baking tray and bake at 350 farenheit for about 2o mins.  Toss once during roasting and keep an eye out for no more moisture on the almonds.  Let cool and store for snacks, soups, salads.
